To take a screenshot of whatever is on your iPhone's screen, simply hold down the Home button and press the Sleep button at the top. The screen will flash white, and your screenshot will be saved to your "Camera Roll" folder.

Note: You must have the 2.0 firmware, regardless of whether you are using a first generation iPhone, an iPhone 3G, or an iPod Touch.
